Spring is here!

I am not doing a meal plan this week cause it’s going to be a crazy week, packing, I start work nights etc. etc. etc! Anyway instead I thought I would give you a YUMMY spring dessert recipe. I took a break from packing yesterday and made some BANANA PUDDING, one of my favorite desserts! This recipe is actually from my sister-in-law, Carla, it is delicious!

Ingredients
1 lg box of vanilla pudding
2 cups of milk
1 can sweetened condensed milk
1 8oz package of cream cheese
4-6 bananas
nilla wafers
1 container of cool whip
Line a baking dish with a layer of wafers then bananas and set aside. Whisk milk and pudding together. Then in a separate bowl blend the softened cream cheese and the can of condensed milk. Combine pudding and cream cheese mixture then fold in the cool whip. Spread half of the mixture over the bananas then make another layer of wafers and sliced bananas. Spread the remaining half of the mixture over the top and refrigerate!

Cause I felt like it…

Just some stuff I felt like writing about

I’m nervous about working nights, I don’t think my body can handle it, I am not, nor have I ever been a nap person. that’s right I don’t take naps!

I used to think those people at disney world that make their autistic children wear t-shirts that say “i’m autistic please be patient with me” were weird but lately I’ve been thinking about getting Jonas a t-shirt that says “i’m autistic and you don’t have to feel bad about it” or “i’m autistic and I like mulch so get over it!” or “i’m autistic and yes my mom is aware that there are alot of special programs available for children like me” (although i think that last one might be hard to fit on a 2T t-shirt)

I have a love/hate relationship with moving/packing. I hate cardboard. I hate newspaper ink all over my hands. I hate carrying boxes from one place to another. However, I love getting rid of things. I love organizing.  I love starting fresh.

I am so not ready for bathing suit season. sigh.

I went to the dr. the other day and she found a lump on my back that she wants to ultrasound. I am about 99% sure it’s nothing but it just made me feel old. 

I have considered getting pregnant again just for some new photography material, jk…sorta :)  

I had to have a root canal the other day. I hate the dentist. This might sound crazy but I have this fear that while they are working on me I will start choking on my saliva cause the assistant forgets to suction me and I will choke to death cause I can’t talk to warn them. I know…completely irrational but it goes through my head.

I started using wheat pasta this week and I can’t tell the difference at all! I totally thought I wouldn’t like it.

I am writing this instead of going to bed early which is just plain silly but I figured I would have just laid in bed and thought about what I wanted to write in this post for 20 minutes anyway so…

Pool Shark

Does anybody else think that this Adam Lambert guy is sort of an American Idol “shark”. What I mean is you know the term pool shark where the guy walks into a pool bar and pretends to be an amateur then all the sudden he pulls out his own pool cue. I feel like Adam joined this amateur singing competition and is totally NOT an amateur! It’s sort of annoying to me. I can just picture him sitting in his dressing room doing the dr. evil laugh and thinking his little plan worked. Ok maybe that’s taking it to far :) Anyway, it just makes the show so predictable, I mean you can’t tell me that if he gets voted off that they won’t use the wild card on him!

We’re getting there.

Jonas is doing really well these days. He continues to progress and learn each week and we are so proud of our little guys progress. One thing that he has struggled with was learning signs. He has done amazing with PECS but for some reason signing didn’t go as well. However, he has made some real progress lately with signing. He has learned the sign for open and is currently working on the sign for swing, drink and eat. I wanted to show this clip of him learning the sign for eat!

Weekly Meal Plan

Monday – Roasted Corn Quesadillas with Black beans and rice – I am just going to saute corn then put it on some flour tortillas with queso and salsa verde. I just heat the quesadillas in a large saute pan for a couple minutes on each side. (I got this idea from a magazine but I am changing it a bit.)

Tuesday – Pork Chops and Orzo. I bought 2lbs of Orzo last week so I am using the rest of that. I plan on baking the chops and drizzling them with a mixture of dijon mustard and apple cider vinegar.

Wednesday – Leftovers

Thursday – Order some pizza or something.

Friday – Stovetop Sausage Mac and Cheese – this is from cooking light even though it doesn’t sound like it :)

Saturday – Italian Bacon Drumettes – Brian loved these SO much I am making them again!

Sunday – Nothin’

Movin’ on up.

Let the packing begin! The Nugent’s are movin’ again! I know what you are thinking…didn’t they just do that??!! Yep, we’re crazy like that! Actually we are moving for lots of reasons but one of the big reasons in because Jonas is an active little boy and he desperately needs a yard to run around in so we are moving to a house!! YAY!! We aren’t actually moving until the middle of next month but Brian and I were so excited when we decided on the new house that we went out an bought a new toy for Jonas! We got to try it out the other day in my brother-in-law’s yard. Check em’ out!
