Weekly Poll

Its Christmas time, Brian’s in sales and I am finishing my degree so needless to say money is tight right now. Anyway we don’t get to eat out much cause its just one of those things that goes first when you are on a budget and Jonas isn’t all that pleasant at resturants so I would say we eat out about 2 times at the most a month. This does not include chick-fil-a :)

Soy bean tortillas

Ok like I said this is a family recipe and although they sound very weird I LOVE them and you may too.

Ingredients:

1 12oz bag of soy beans (this you have to get at a health food store)
chopped pickles
shredded cheese
mustard 
nutritional yeast (also at the health food store) this is not yeast that you use to make bread. They are yellow flakes that have TONS of vitamins and nutrients in them and can be sprinkled on all kinds of food. It sounds weird but it is yummy.

The soybeans need to be soaked in water overnight. Then you put them in the crockpot and cook them for about 9 hours on low. You can cook them in a pressure cooker but those things scare me so I find the crockpot to be a much safer option. Next, you just assemble the Tortilla, beans, cheese, pickles, mustard and yeast. Then, enjoy!

Weekly Meal Plan

Monday – Spaghetti – this is more for Brian I just eat the noodles cause I am not a huge fan.

Tuesday – Baked Pork Chops with salad

wednesday – Hospital

thursday – Soy Bean Tortillas – this is a family recipe. I won’t even post the recipe because its weird and most people don’t like it but I grew up on them so I love em!

Friday- Chicken and artichokes with lemon cream sauce over pasta

Saturday- Brian and I are going out! YAY!

Sunday – Nada

It was a thankful weekend!

We had a great thanksgiving weekend this year. Thursday was spent at my Mom’s house and Friday we had a get together with my husband’s side of the family. It is so funny how much the Holiday’s change when you get older and begin to add all kinds of new family members into the mix!
